Beef Jerky (with Red Wine)

Description

Lean beef is marinated in red wine before being salted, spiced and dried. Here it is, surprisingly ‘tender’, if that’s a word one can ascribe to dried beef, but it is quality beef and it shows. The bite is most satisfying.

Our specialist Martin has a background in dried, pickled and smoked foods and started making historically inspired foods just over a decade ago. From his base in South Wales he preserves fresh hand selected foods using just the most simple ingredients.

This hand sliced beef is marinated in red wine with garden herbs and freshly cracked black pepper, before being naturally air dried.
